Green chutney steamed fish


Ingredients for Green Chutney Steamed Fish:
Fish 1 kg
Spicy green chutney 4-6 tbsp
Lemon juice of 1 lemon

For Green Chutney:
Coriander 1 bunch
Mint 1 bunch
Cumin seeds 1 tsp
Salt 1 tsp
Green chillies 12-15
Desiccated coconut 1 cup
Sugar 1 tsp
Vinegar 1 tbsp
Lemon juice of 2 lemons

Method:
For the green chutney:
Grind together coriander, mint, cumin seeds, salt, green chillies, desiccated coconut, sugar, vinegar, lemon juice till pasty. 
Apply spicy green chutney on the fish and let marinate. 
Just before eating, wrap in foil and steam in a steamer over a pan of simmering water and let cook till done. 
Sprinkle lemon juice on top and serve in the foil.

Tomato Chutney


Ingredients For Tomato Chutney:

Tomatoes 3-4
Tomato paste 2 tbsp
Green chilies 3-4
Garlic 2 cloves
Coriander  1/2 bunch
Onion 1 small
Turmeric powder a pinch
Red chili powder 1-2 tsp
Salt to taste
Lemon 1
Oil 1-2 tbsp
Mustard seed 1/4 tsp

Method:
Heat the oil add the mustard seeds, add garlic paste and the tomato paste.
Fry together for a minute then add the blended tomatoes and the garlic, green chilies, coriander, onion.
Let these cook and simmer down, then add red chili powder, turmeric and salt.
Let the chutney cook until you see the oil coming out from the sides.
When its about done, add the lemon juice.

Chutney Prawns

Ingredients For Chutney Prawns:
Large prawns 1 kg
Breadcrumbs 1 cup
Egg 1
Coriander 1 bunch
Mint  1 bunch
Coconut 4 tbsp
Green chilies 3-4
Lemons( juice) 2
Cumin seeds 1/2 tsp
Sugar 1 tbsp
Salt 1/2 tsp
Oil  to fry

Method:
Grind coriander, mint, green chilies, coconut, cumin seeds, lemon juice, sugar and salt together.
Make a cut in the prawns and flatten them slightly.
Apply chutney to the prawns and then coat each in breadcrumbs, refrigerate for a while.
Dip in egg and fry till crispy.
