Peanut Butter Fudge

Ingredients:
2 cups sugar
½ cup milk
¼ cup creamy peanut butter
½ cup unsalted butter
Pinch of salt

Method:

Boil milk with sugar. 
Add peanut butter, butter and salt and keep stirring till mixed in well. 
Cook till thick and then pour in a greased 8 inch tin, let cool completely before cutting in squares.

Fudgy Brownies


Ingredients For Fudgy Brownies:


Chocolate, chopped 4 oz
Butter ½ cup
Caster sugar 1 ½ cup
Eggs 2
Vanilla essence 1 tsp
Flour 1 cup

Method

Melt butter and chocolate until smooth and well blended. 

Mix in the sugar and eggs then stir in the flour until just blended. 
Spread evenly into a greased and lined 8x8 inch pan. 
Bake at 180 degrees C for 25 to 30 minutes in the preheated oven, until a toothpick inserted into the center comes out with crumbs sticking to it. 
Cool before cutting into squares.

Note: Don't add baking powder. Brownies are not supposed to rise. It will be a cake if it rises.

Chocolate Mint Fudge

Ingredients
Chocolate, chopped 500 gm
Condensed milk 400 gm
Butter 60 gm
Mint essence 1 tsp
Ingredients for Decoration
Milk Chocolate, melted 100 gm

Method
Melt c
hocolate, condensed milk and butter till smooth. 
Keep stirring. 
Remove from heat and add essence. 
Mix. 
Spread in a greased square pan and refrigerate till set. 
Cut in squares or triangles when set. 
Drizzle or pipe milk chocolate on the squares. 
Refrigerate till set.

Fudge Sauce

Ingredients
Sugar 3/4 cup
Cocoa powder 6 tbsp
Evaporated milk 1 can
Butter, cubed 1/3 cup
Miniature marshmallows 3/4 cup
Vanilla essence 1 tsp

Method
In a pan, combine sugar and cocoa; stir in evaporated milk. 
Add butter.
Bring to a boil over medium heat; cook and stir until sugar is dissolved. 
Add marshmallows; cook until melted. 
Remove from the heat, stir in vanilla. 
Cool and bottle and use over desserts or cakes.

Hot Fudge Sundae

Ingredients
Sugar 3/4 cup
Cocoa powder 6 tbsp
Evaporated milk 1 can
Butter, cubed 1/3 cup
Miniature marshmallows 3/4 cup
Vanilla essence 1 teaspoon
Vanilla ice cream as required
Nuts and cherries for topping

Method
In a large saucepan, combine sugar and cocoa powder; stir in milk. 
Add butter. 
Bring to a boil over medium heat; cook and stir until sugar is dissolved. 
Add marshmallows; cook until melted. 
Remove from the heat stir in vanilla. 
In a sundae dish, put ice cream scoops and top with hot fudge sauce and nuts and cherries if desired.

Coconut Chocolate Fudge



Ingredients for Coconut Chocolate Fudge: 
Dark chocolate, grated 450 grams
Desiccated coconut 1/3 cup
Unsalted butter 3 tablespoons
Condensed milk 1 tin

Method:
Put chocolate in a large glass bowl. 
Keep the bowl over a deep non stick pan of boiling water, add butter and melt the two together. 
Lightly grease an aluminium tray and line the base with butter paper. 
When chocolate and butter melts, add condensed milk and mix. 
Take the bowl off the boiling water and add desiccated coconut, (reserving some for sprinkling on top) and mix well. 
Pour the mixture into the prepared tray and tap the tray on the table top so that it spreads evenly. 
Sprinkle the reserved desiccated coconut on top. 
Once it cools down to room temperature keep it in a refrigerator to set. 
Cut into squares and serve. 
You can also wrap in butter paper if you want to store it for some days.

Fudge Brownies


Ingredients
Corn syrup 1 ½ tbsp
Flour 1 cup
Baking powder ½ tsp
Cocoa powder 1 ½ tbsp
Cooking chocolate 9 ounce
Butter 1 cup
Brown sugar ½ cup
Sugar ½ cup
Eggs 4

Method

Beat 4 eggs, melt 1 cup butter, ½ cup sugar, ½ cup brown sugar and 9 ounce chocolate in a pan over low flame and keep aside to cool.
Add this cooled chocolate mixture to the eggs.
Now add 1 ½ tbsp corn syrup and mix well.Sift together 1 cup flour, 1 ½ tbsp cocoa powder and ½ tsp baking powder, add to the chocolate mixture and mix well.
Pour mixture in a baking pan and bake in a preheated oven of 180 degrees for 25 to 30 minutes.
Cut into squares and serve.
