Brownie Kebabs



Ingredients for Brownie Kebabs:
Butter ½ cup
Cocoa 1/3 cup
Caster sugar 1 cup
Eggs 2
Vanilla essence 1 tsp
Flour ¾ cup
Salt ¼ tsp
Strawberries 
Chocolate sauce
Large marshmallows

Method:
Melt butter add cocoa, remove from fire and cool. 
Beat eggs,
Add sugar, vanilla essence, flour and salt mix.
Pour in a greased and lined 13x9 pan.
Bake for 20-25 min only cool well, then cut in heart shapes using a heart shaped cookie cutter. 
On a skewer put a heart shaped brownie piece, a marshmallow and a strawberry and drizzle chocolate sauce over the brownie kebabs. 
Serve some chocolate sauce on the side too to dip the kebabs.

Butterscotch Squares (Blondie or Blonde Brownie)


Ingredients For Butterscotch Squares:
Flour 2 cups
Salt 1 tsp
Baking powder 1 tsp 
Baking soda ¼ tsp
Dark brown sugar 2 cups packed
Butter (melted) 3/4 cup
Eggs 2
Vanilla essence 1 tsp
Chopped toasted walnuts 1 cup

Method:
Combine flour, 1/2 tsp salt, baking powder and baking soda.
Whisk brown sugar and 1/2 tsp salt.
Pour in melted butter, add eggs and vanilla essence.
Fold in flour and walnuts.
Spread in a greased and lined dish bake at 180 degrees C for 20 minutes until edges start to brown.
Let set well before cutting in squares.

Rocky Road Brownies


Ingredients For Rocky Road Brownies:
Unsalted butter 1 cup
Flour 1 cup
Bittersweet chocolate 6 ounces
Sugar 2 cups
Cocoa powder 3/4 cup
Salt 1/2 tsp
Eggs 4
Butter 2 tsp
Vanilla essence 1 cup
Mini marshmallows 1 cup
Semisweet chocolate chips 1 cup
Unsalted roasted peanuts 3/4 cup


Method:
First take a baking pan cover it with foil paper, now paste butter on foil then dust it with flour.
Then take a bowl melt it with chocolate, until it melts and becomes soft, now remove the bowl from stove and add sugar, coco powder and salt mix it well.
Then add tomatoes, until it batter becomes thick.
Now add vanilla essence and gram flour.
Then put the batter into pan for 35 minutes.
Now take it out in oven add marshmallow,chocolate chips and peanuts place it in oven for 5 minutes.
Make it cool after 5 minutes, cut into slices then serve.

Eggless Brownies


Ingredients For Eggless Brownies:
Flour 1/3 cup
Water 1 cup
Butter 1/2 cup
Cocoa powder 2/3 cup
Caster sugar 2 cups
Vanilla essence 1 tsp
Flour 2 cups
Baking powder 2-1/2 tsp
Salt 1/2 tsp

Chopped walnuts 1/2 cup


Method:
Preheat the oven on 175 degree C on 19x 13 inch pan grease it.
Take a big pan, pour flour with water and cook it on low temperature until the mixture becomes thick.
Take another pan add melted butter, spread cocoa powder mixture.
Now take a caster sugar and vanilla essence beat it well mix it in mixture.
Now stir it into coco mixture.
Then add flour, baking powder and salt blend it well.
Fold it in walnut, bake it on 20 -25 minutes.
Then cut it into bars then serve it.

Nutty Cin-Apple Brownies




Ingredients For Nutty Cin-Apple Brownies:
Butter 1/3 cup
White sugar 1/2 cup
Egg 1
Apples 2 medium
Walnuts chopped 1/2 cup
All purpose flour 1 cup
Salt 1/4 tsp
Baking powder 1/2 tsp
Baking soda 1 tsp

Cinnamon ground 1 tsp
Vanilla essence 1/2 tsp

Chocolate chip or Chocolate bits as required

For Topping:
Cinnamon sugar a little

Method

Peel, core and dice apples (approx 1 cup diced)
Preheat oven to 350 degrees F (175 degrees C).
Grease a 9x9 inch baking dish.
In a large bowl, cream the butter and sugar, then add egg and beat until fluffy.
In a separate bowl, sift together the flour, salt, baking powder, baking soda, and cinnamon.
Stir the flour mixture into the wet mixture until just blended.
Add vanilla.
Fold in the apples and walnuts.
Spread the batter evenly in the prepared baking dish.
Sprinkle some cinnamon sugar on top before baking.
Bake 55 minutes in the preheated oven, or until a toothpick inserted in the centre comes out clean
.

Cocoa Brownies

ING
½ cup butter
1/3 cup cocoa
1 cup caster sugar
2 eggs
1 tsp vanilla essence
¾ cup flour
¼ tsp salt
½ cup chopped walnuts

Method:
Melt butter add cocoa, remove from fire n cool.
Beat eggs add sugar, vanilla essence, flour and chopped walnuts & salt.
Mix and pour in greased and lined 8x8 pan.
Bake for 20-25 min only.
Cool well preferably overnight and then cut in squares and serve.

Fudgy Brownies


Ingredients For Fudgy Brownies:


Chocolate, chopped 4 oz
Butter ½ cup
Caster sugar 1 ½ cup
Eggs 2
Vanilla essence 1 tsp
Flour 1 cup

Method

Melt butter and chocolate until smooth and well blended. 

Mix in the sugar and eggs then stir in the flour until just blended. 
Spread evenly into a greased and lined 8x8 inch pan. 
Bake at 180 degrees C for 25 to 30 minutes in the preheated oven, until a toothpick inserted into the center comes out with crumbs sticking to it. 
Cool before cutting into squares.

Note: Don't add baking powder. Brownies are not supposed to rise. It will be a cake if it rises.

Oreo Brownies

Ingredients
Chocolate, chopped 2 oz
Butter 2 oz
Sugar 7 tbsp
Egg 1
Vanilla essence 1 tsp
Flour ¼ cup
Baking powder ¼ tsp
Milk 2 tbsp
Salt a pinch
Oreo cookies, chopped 6

For the frosting:

Butter 3 tbsp
Icing sugar ¾ cup
Vanilla essence ¼ tsp
Oreo cookies, crushed 3

Method

Melt butter and chopped chocolate Stir in the sugar and vanilla essence, then let cool. In a small bowl, stir together the flour, baking powder and salt. 
Add the dry ingredients to the chocolate mixture, stirring a few times before adding the egg and milk. 
Mix together well until flour is no longer visible in the batter. 
Pour into the greased loaf pan and bake at 180 degrees C for 25 minutes. 

To make the frosting, beat together all ingredients except for the cookies until light and fluffy. 
Finally, stir in the crushed cookies. 
When completely cool, frost the brownies and serve.

Marshmallow Brownies






Ingredients For Marshmallow Brownies:


Butter 1 cup
Sugar 2 cups
Cocoa powder 1/3 cup
Eggs 4
Flour 1-1/2 cup
Salt 1 tsp

Marshmallows 10 oz

Butter 1/2 cup
Milk 1/4 cup
Vanilla essence 1-2 tsp
Cocoa powder 3 tbsp

Frosted Brownies



Ingredients 
Chocolate, chopped 4 oz
Oil 1 cup
Sugar 2 cups
Eggs 4
Vanilla essence 1 tsp
Flour 1 cup
Salt ¼ tsp
Walnuts, chopped 1 cup

Ingredients for Frosting:
Butter 2 tbsp
Chocolate 2 oz
Icing sugar 2 ½ cups
Milk ¼ cup
Vanilla essence 1 tsp

Method
Melt chocolate and add sugar and oil, mix well. 
Beat in eggs, vanilla essence and flour, salt and nuts, pour in a greased 13 x 9 tin. Bake at180 degrees C for 25-30 minutes, till a skewer inserted in centre comes out with a few crumbs sticking to it, cool and frost.
To make the frosting, melt butter and chocolate and add icing sugar, milk and vanilla essence till smooth.

Mint Brownies With Magnum




Ingredients
Unsalted butter for preparing the pan
Chocolate, chopped 4 ounces
Unsalted butter 4 ounces
All-purpose flour 3/4 cup
Salt ¼ tsp
Sugar 1-1/4 cups
Eggs 3
Vanilla essence 3/4 tsp
Peppermint extract 1/2 tsp

Method:
20 to 25 After Eight mints or 8 York Peppermint Patties, unwrapped Preheat the oven to 325 degrees F. With the rack in the center position.
Melt the chocolate and butter in a metal bowl placed over, but not touching, a pan of simmering water, or in a microwave-safe bowl in a microwave oven. 
Stir until the mixture is melted and smooth. 
Remove the bowl from over the water and let the mixture cool slightly. 
Sift the flour and salt into a small bowl. 
Set aside. 
Place the sugar and eggs in a medium bowl. 
With an electric mixer on medium speed, beat the sugar and eggs until light yellow and fluffy, about 2 minutes. 
Reduce the mixer speed to low and add the vanilla and peppermint extracts. 
Add the melted chocolate mixture and mix well. 
Add the flour mixture and mix just until blended. 
Scrape half the batter into the prepared pan. 
Layer the mints evenly over the top surface of the batter. 
Scrape the remaining batter over the mint layer, being careful not to dislodge the mints. 
Use an offset spatula or a butter knife to gently smooth the batter; make sure all the mints are covered.
Bake the brownies for 35 to 40 minutes, or until the top is shiny and a cake tester inserted in the center comes out with a few moist crumbs attached. 
The batter may puff irregularly, which is fine. 
It is better to underbake than to overbake these brownies. 
Transfer the pan to a wire rack and let the brownies cool completely in the pan.
Use the foil to lift the entire cake of brownies from the pan to a work surface. 
Peel away the foil and cut the brownies into 16 equal squares. 
Wrap the brownies individually in plastic wrap and store them at room temperature in an airtight container for up to 2 weeks.

Speedy Brownies


Ing :
2 cups sugar
1 ¾ cups flour
5 eggs
½ cup cocoa
1 tsp salt
1 cup oil
1 tsp vanilla essence
1 cup chocolate chips

Method :
Beat sugar, eggs, oil, flour, vanilla essence, cocoa and salt, fold in
the chips and pour in a greased and lined tin and bake for 30 minutes at
180 degrees C.
Cool and cut in squares and serve.

Yummy Brownies


Ingredients for Yummy Brownies:
115gm butter
115gm chocolate
200gm sugar
2 eggs
½ tsp vanilla essence
50gm flour
¼ tsp salt
100gm walnuts toasted and chopped
70 gm chocolate chips.

Method
Melt butter, add chocolate and stir till smooth. 
Remove from fire and add in the sugar, eggs and vanilla, stir in flour, salt, walnuts and chocolate chips. 
Pour mixture in a 8inch square greased and lined pan and bake at 160 degrees C for 30 minutes. 
Brownies will be done when a skewer inserted in centre comes out with a few crumbs stuck to it. 
Cool on a wire rack and serve cut in squares.

Toffee Brownies

Ingredients: 

5 oz dark chocolate
4 oz butter
1 oz cocoa powder
2 eggs
7 oz caster sugar
5 oz flour

Toffee: 

1 tin condensed milk

To serve: 

chocolate sauce
cream

Method: 

For the toffee, fill a big saucepan with water and boil the closed tin of condensed milk in it for 4 hours. 
Make sure the water does not boil down completely.
Carefully remove the tin and let it cool completely before using.

For the brownie, melt 5 oz dark chocolate and 4 oz butter together.
Add in 1 oz cocoa powder and 7 oz caster sugar and mix, cool slightly and add in the 2 eggs. 
Fold in 5 oz flour.
Pour half of the batter in a greased and lined 8” square tin. 
Drop dollops of toffee onto the batter and top with the remaining brownie batter. Swirl some toffee on top to give a marbled effect.
Bake at 175 degree C for 30 minutes or until a skewer comes out clean. 
Cool. 
Serve cut in squares with cream and chocolate sauce.

Fudge Brownies


Ingredients
Corn syrup 1 ½ tbsp
Flour 1 cup
Baking powder ½ tsp
Cocoa powder 1 ½ tbsp
Cooking chocolate 9 ounce
Butter 1 cup
Brown sugar ½ cup
Sugar ½ cup
Eggs 4

Method

Beat 4 eggs, melt 1 cup butter, ½ cup sugar, ½ cup brown sugar and 9 ounce chocolate in a pan over low flame and keep aside to cool.
Add this cooled chocolate mixture to the eggs.
Now add 1 ½ tbsp corn syrup and mix well.Sift together 1 cup flour, 1 ½ tbsp cocoa powder and ½ tsp baking powder, add to the chocolate mixture and mix well.
Pour mixture in a baking pan and bake in a preheated oven of 180 degrees for 25 to 30 minutes.
Cut into squares and serve.

Surprise Brownies


Ing for Surprise Brownies:
200gm cream cheese
½ tsp vanilla essence
9 oz caster sugar
2 eggs
100 gm butter
3 tbsp cocoa powder
100gm self raising flour
50gm walnuts, chopped

For the Frosting :
4 tbsp butter
1 tbsp milk
100gm icing sugar
2 tbsp cocoa powder
halved walnuts to decorate

Method :
Beat cream cheese, essence and 2 ½ tbsp of caster sugar. 
Set aside.
Beat eggs and remaining sugar till light and fluffy. 
Heat butter and cocoa gently. 
Cool slightly and add in the eggs and fold in flour and nuts. 
Pour half of the brownie mixture into a greased 8” tin and carefully spread the cream cheese mixture onto it. 
Cover with remaining mixture. 
Bake at 180° for 40 minutes. 
Cool in tin atleast 6 hours. 

To make frosting:
Melt butter add milk, cocoa and sugar. 
Spread over the brownies and decorate with halved walnuts.
Makes 16.

Note:
For self raising flour: 
Add a tsp of baking powder to 1 cup of flour and sieve well before using.
For cream cheese: 
Use Happy Cow or Philadelphia cream cheese available in tubs as the rest of the available brands are quite saltish.

Mocha Brownies


Ing for Mocha Brownies:
2 oz butter
4 oz chocolate, chopped
6 oz brown sugar
2 eggs
1 tbsp coffee, dissolved in 1 tbsp hot water
3 oz plain flour
½ tsp baking powder
2 oz chopped walnuts

Method :
Melt chocolate and butter and set aside to cool. 
Beat sugar and eggs and fold in the chocolate mixture and cooled coffee. 
Fold in sifted flour and baking powder and walnuts. 
Pour in a greased and lined 8” square tin and bake at 180° for 25 minutes. 
Cool in tin and then remove from tin, peel off paper and cut in squares and serve.
Makes 16.
