Braised Onions



Ingredients for Braised Onions:

1/2 kg onion
2 tbsp butter
Chicken stock 1 cup
1/2 tsp salt and pepper
1 tsp sugar

Method:
Blanch the onions in boiling water for one minute.
Drain and risen in cold water to stop cooking "brown-braised" onions.
Before braising, sauté peeled onions in one layer in butter until lightly browned.
Then add liquid, salt and sugar, cover and simmer slowly for 25 minutes or until tender.
