Marzipan


Marzipan

Ingredients
Almonds (blanched & ground) 8 oz
very fine caster sugar, sieved 8 oz
Icing sugar, sifted 8 oz
Eggs 1 – 2
Almond essence 1 tsp


Method
In a bowl, mix 8 oz icing sugar, 8 oz very fine caster sugar, 8 oz blanched and ground almonds, 1 tsp almond essence and gradually add in 1-2 eggs. 
Knead to form a stiff paste. 
Wrap in cling and store in fridge.
