Garlic Mash


Ingredients for Garlic Mash:
Whole pod garlic 1
Extra-virgin olive oil 2 tbsp
Potatoes 3-4 large
Salt 1 tbsp
Milk 1 cup
Lemon juice 3 tbsp
Crushed black pepper

Method:
Halve the garlic pod n place on a piece of foil, drizzle olive oil and wrap into a package. 
Roast until the garlic feels very soft, 20 to 40 minutes, depending on size. 
Let cool. Boil potatoes and salt with water in a pan. 
Cook until potatoes are very tender. 
Drain well and mash. 
Squeeze the garlic cloves into the potatoes. 
Add milk lemon and pepper and stir to combine.

Garlic Croutons (Fried)


Ingredients:
Garlic, 1 clove 
White bread (3 slices)
oil for frying
Chilli Powder a little
Salt and Pepper to taste 

Instructions
Crush the garlic.
Remove the crusts from the bread slices.Cut the bread into small cubes.
Heat the oil.
When hot, add the bread cubes and fry whilst stirring constantly.
When the cubes start to turn colour, add the garlic and mix well.
Remove when the cubes are golden brown and drain.
Sprinkle salt and pepper and a little chilli powder.

Garlic Sauce


Ingredients For Garlic Sauce:
Potato 1 large

Garlic 4 cloves
Mayonnaise 2 to 3 Tbsp
Yogurt 2 tbsp
Fresh cream 1 tbsp
Tahini sauce (optional) 1/2 tsp
Vinegar/ lemon juice 1 tbsp
Olive oil or melted butter 2 tbsp
Red chili powder 1/2 tsp

Salt a pinch


Method:
Boil the potato with 2 cloves of garlic and a pinch of salt until potato is tender.
Drain the water add all the ingredients into a blender including the boiled potato and garlic.
Blend until completely smooth.
Sauce will be somewhat sticky and thick.
Adjust salt to your taste.
Sauce is ready and it tastes better the following day, so can be made a day in advance and keeps well for up to a week in the fridge.

Creamy Garlic Sauce



Creamy Garlic Sauce
Ingredients

Cream 1 cup
Mayonnaise 2 tbsp
Black pepper crushed ¼ tsp
Thick curd 2 tbsp
Garlic crushed 1 clove
Lemon juice 2 tbsp
Caster sugar ½ tsp

Method

Mix all ingredients well and serve with buffalo bites.

Crunchy Crostini


Ingredients:
Baguette (French loaf) 1
Garlic, roasted and halved 1 Pod
Olive oil as required
Cheese grated as required
Chicken cold cuts as required
Tomato sliced 1
Olives sliced 5 – 6 

Method

Grill or toast the baguette slices on both the sides till crispy and golden. 
Rub with roasted and halved garlic pod and brush with olive oil. 
Add the toppings and serve immediately.

Thai Garlic Rice



Ingredients for Thai Garlic Rice:

Rice 250 gm
Garlic chopped 50 gm
Salt n pepper 1/4 tsp
Sesame oil 1 tbsp

Method:

Boil 250 gm rice in water and keep aside.
The rice should be cold before cooking.
Heat a wok on a high flame.
Heat 1 Tbsp sesame oil in a wok and sauté 50 gm chopped garlic.
When the garlic is brown, add the rice and 1/4 tsp salt and pepper.
Stir-fry until everything is well mixed (1-2 minutes).
Dish out when well mixed and heated.

Put in a small bowl and overtrun it on a plateso that it takes the shape of the bowl and serve with Chung Mai Chilli Chicken and Thai Salad.

Garlic mayo fries


Ingredients
Garlic mayo 1 cup
Potatoes (cut into fries and fried) 3


Method
Fry the thinly cut potatoes and top with garlic mayo and serve immediately.

Garlic Mayonnaise




Ingredients

Garlic, sliced into halves 1 pod
Extra virgin olive oil 4 tbsp
Salt to taste
Ground black pepper to taste
Egg yolks 4 large
Mustard 1 tsp
Water 1 tbsp
Oil 1 ½ cups
Lemon juice 2 tbsp

Method

Place the garlic onto a sheet of aluminium foil, drizzle it with 1 tablespoon of the olive oil, and season it with salt and pepper.
Close the foil up and roast the garlic until it is soft, about 35 to 40 minutes at 200 degrees C.
When it is cool enough to handle, squeeze the soft pulp into a bowl and set aside. In a blender add the egg yolks, mustard, water, and salt and pepper. 

Then drizzle in the oil in a thin stream with the machine running.
Then add in the garlic and lemon juice.
Taste and adjust seasoning with more lemon juice, salt, or pepper.
Thin the mayonnaise with more water if it is too thick.

Garlic bread

Ingredients
Butter ½ cup
Garlic 1 ½ tbsp
Dried parsley 1 tbsp
Loaf Italian bread, cut into slices 1
Mozzarella cheese shredded 8 oz

Directions
Preheat oven to 350 degrees F (175 degrees C).
In a small saucepan over medium heat, melt butter and mix with garlic and parsley. 
Place Italian bread on a baking sheet. 
Using a basting brush, brush generously with the butter mixture. 
Bake in the preheated oven approximately 10 minutes, until lightly toasted. 
Remove from heat. 
Sprinkle with mozzarella cheese and any remaining butter mixture. 
Return to oven approximately 5 minutes, or until cheese is melted and bread is lightly browned.

Yogurt Garlic Sauce




Ingredients for Yogurt Garlic Sauce:
Yogurt 1 cup
Garlic minced 2 cloves
Lemon juice 2 tbsp
Salt to taste 

Preparation:
In a small mixing bowl, combine yogurt, lemon juice, garlic, and salt.
Mix well. 
Serve immediately, or cover and refrigerate.

Kolson Chinese garlic egg noodles



Ingredients:

Kolson noodles 8ounces
sesame oil 1/2 tsp
prawns, boiled 1/2 kg
bean sprouts 1 cup
green onions, chopped 1-2
garlic cloves crushed 2
soya sauce 1 Tbsp
sugar 1/2 tsp
chili paste 1/4 tsp
oil 1 tbsp

Preparation:

Boil and drain the 8ounces noodles. 
Rinse with cold water and toss with 1/2 tsp sesame oil.
Combine the 1 Tbsp soya sauce, 1/2 tsp sugar and 1/4 tsp chili paste in a small bowl. Set aside.
Heat a wok and add the 1 tbsp of oil.
When oil is hot, add 2 crushed cloves of garlic and the noodles.
Stir-fry for a minute, and then stir in the prawns and 1 cup of bean sprouts.
Give the sauce a quick re-stir and swirl it into the pan.
Stir in the green onion for 1 - 2 minutes to heat everything through.
Serve hot.

Croutons


Ingredients
Bread slices, crusts removed 4 – 6
Butter 2 tbsp
Garlic, chopped 1 tbsp

Method
Cut bread in cubes and sauté in butter and garlic.
Remove when brown and crisp. 
Drain on paper towels and let cool, use to top soups. 
They can also be baked in the oven for 10-15 minutes or till crisp.

Garlic croutons (Baked)


Ingredients
French bread 1 stale
Garlic 2- 3 cloves
Olive oil to drizzle
Chopped basil or parsley 1 tsp

Method
Cube the stale bread, mix olive oil with parsley and garlic, drizzle with this oil and bake at 180 degrees C for 15-20 minutes or till crispy and golden.

Garlic Bread


Ingredients for Garlic Bread
Large French loaf 1
Butter 3 tbsp
Parsley or coriander 1 tbsp
Salt ½ tsp
Black pepper ½ tsp
Garlic crushed 4-5 cloves

Method
Slice the French loaf but not all the way through.
Apply butter mixed with garlic, parsley, salt and pepper. 
Cover entire French loaf in a foil and place on a baking tray and bake 15 minutes or till golden and butter has melted.

Dry Garlic Chutney


Ingredients for Dry Garlic Chutney:
Garlic chopped 2 tbsp
Dried coconut grated ½ cup
Chili powder 1 tbsp
Salt to taste

Method: 
Combine all the ingredients in a mixer and blend to a coarse powder.
Use as required.
